Public API Docs Site & OG Image Fix

New Features

• Launches the foundation of the Insights public API documentation site, scaffolding a standalone docs site co-located with the API service and deployed independently of the main application. The site provides initial structure for API reference documentation, including guide pages covering authentication, pagination, and error handling.
• Introduces an automated OpenAPI specification export that regenerates the interactive API reference on every release, ensuring endpoint documentation is always up to date.

Bug Fixes

• Fixes an issue where social preview image generation failures would surface as raw HTTP 500 errors rather than gracefully falling back to the default error page, improving the experience for users and web crawlers accessing project share links.
